class="firstletter">I</span> was thinking to myself the other day “I really do love chocolate and I am craving it reallllllly bad… like right now!!” I needed a sweet little chocolate treat that I could add just a little of this and a little of that to. Well, I concocted these little devils. Check ‘em out!!! ↓↓↓</p><p> <img
src="http://www.jerrysnuthouse.com/blog-images/finishedchocolateclusters.jpg" alt="chocolate clusters recipe" /></p><p>Yeah, I know… Yummo!! My friend even told me they look like something Little Debbie would create. Pretty proud of myself! So, now you’re thinking to yourself “wow, I really need to make these… like right now!” Well, you will love the fact that they are so very simple, and yes, they really are as delicious as they look!</p><h2 class="big-text">Here’s the chocolate clusters recipe:</h2><p><span
class="big-text">Step 1:</span></p><p>I started out by putting some random goodies into a mini muffin tin (no chocolate on the bottom for this step). I used large cashews (roasted/no salt), Unblanched almonds (roasted/no salt), pecan halves (roasted/no salt), blanched hazelnuts (raw), you could also consider just getting a good ol’ bag of mixed nuts (it’s completely up to you whether you use salted nuts or no salt). I prefer no salt for a slightly healthier option. I also added some dried cherries, dried blueberries and even some mini marshmallows (my weakness)! But, like I said, you can add pretty much anything that your sweet little heart desires. These are just some basic starter ideas.</p><p><img
src="http://www.jerrysnuthouse.com/blog-images/chocolateclusters-step1.jpg" alt="chocolateclusters-step1" /></p><p><span
class="big-text">Step 2:</span></p><p>Next, I melted my <a
href="http://www.jerrysnuthouse.com/wafers-milkchocolate">cocoa light diskins / milk melting wafers</a> in a microwave-safe bowl for 30 second increments, stirring each time until the wafers are completely melted. I chose to put the melted chocolate in a Ziploc bag and cut a very small piece off at the tip so I could easily fill the cups with little to no mess. I filled the remaining empty cups about ¼ full with my melted chocolate first before adding the extra goodies on top (for the clusters you want almost completely covered in chocolate).  Again, completely up to you whether you choose to use cocoa light diskins/milk melting wafers, cocoa dark diskins/melting wafers, or even white diskins/melting wafers.</p><p>They also make fun and festive holiday treats &#8211; for Halloween you could use an orange colored chocolate or Saint Patty&#8217;s Day use our green. <a
href="http://www.jerrysnuthouse.com/meltingchocolate/">Tons of choices for melting chocolate.</a>&#8230; I prefer milk chocolate over all others, just my personal choice. I added shredded sweetened coconut at this step only because the coconut will not stick for the “open-bottomed” clusters.</p><p><span
class="big-text">Step 3:</span></p><p>I then covered the first cups I had filled with my various nuts, fruit, etc. with my melted chocolate. Allow a few minutes for the chocolate to slip down into the crevices so that everything will stick together.</p><p><img

class="big-text">Step 4:</span></p><p>Cover the remaining cups with more melted chocolate to seal the deal! Again, wait about 5 minutes for the chocolate to get down into the cracks before sticking them into the fridge.</p><p> <img
src="http://www.jerrysnuthouse.com/blog-images/chocolateclusters-step3.jpg" alt="chocolateclusters-step3" /></p><p>I decided to add some toppings to make them just a tad bit prettier. I topped them with the same ingredients that were inside so my friends would be able to tell what they were choosing when I bring these to my next party. I think it adds a nice touch! You have to do this quickly while the chocolate is still wet so that the toppings will stick when they are done.</p><p> <img

class="big-text">Step 5: Almost Done!</span></p><p>Throw those little guys in the fridge and wait it out. I got sleepy and fell asleep so mine were left in the fridge overnight. Didn’t hurt them a bit, I actually think it gave them a nice shiny finish. But, if you leave them in the fridge for about an hour, you will be good to go! I used a non-stick pan so they slipped out with little to no effort. You could also try putting cupcake inserts into the cups before adding your ingredients. Might be a good idea for a themed party? So, here’s my finished product, makes your mouth water right?</p><p><img

class="big-text">Add Your Own Twist:</span></p><p>Some other cool ideas to try for your own twist on a this <em>chocolate clusters recipe</em>:<br
/> -Add melted vanilla caramels in the middle to create nutty caramel clusters<br
/> -Layer your chocolate (try dark chocolate on the bottom and milk chocolate on the top or vice versa). You could even drizzle them with white chocolate after they are done for a cool look.</p><ul><li>Add peanuts</li><li>Add banana chips</li><li>Add shelled pistachios</li><li>Add a dried apricot or two</li><li>Add crushed nuts on top for a unique look</li></ul><p><a

But, what if you want something just a little bit different, something you can create in your very own kitchen… yet with the same yummy idea? Well, you are in luck! These decadent little bites are nothing short of amazing and are great as a snack for the kiddos or as a tasty party treat! My kids absolutely loved these and they had a blast helping me make them! Very easy! I ended up with 42 pieces but you could make the balls of peanut butter a little bit smaller and end up with more. Enjoy!</p><p><strong><span
style="text-decoration: underline;">Here’s what you’ll need:</span></strong></p><ul><li>1 cup creamy peanut butter (or chunky… your choice! We prefer creamy)</li><li>2 tbsp softened butter</li><li>3/4 cup powdered sugar</li><li>3/4 cup brown sugar</li><li>1 bag of Jerry’s Nut House <a
href="http://www.jerrysnuthouse.com/jnh_product_set/pretzel-twistsmini/">Mini Pretzel Twists</a></li><li>1 bag of <a
href="http://www.jerrysnuthouse.com/wafers-milkchocolate">Merckens Chocolate Melting Wafers</a> (Milk, Dark, or even White it’s all up to you!)</li></ul><p><strong><span
style="text-decoration: underline;">Here’s How:</span></strong> Combine the peanut butter and softened butter in a large bowl with a fork, whisk, or in a stand mixer.</p><p

class="big-text">1. Add both sugars and mix to combine.</span></p><p><img

class="big-text">2.At this point if the filling will roll easily into balls-</span><br
/> without sticking to your hands you’re ready to go!! If not, try adding a little more of each type of sugar until the mix reaches a consistency that is easy to roll. My <u><i>Chocolate Peanut Butter Pretzel Bites</i></u> turned out just perfect with the above amount.</p><p><img

align="center"><p>Use a teaspoon measure to scoop the filling.  Roll each portion into a small ball, then sandwich them between two whole pretzels.</p><p><img

class="big-text">When all the balls are rolled and successfully sandwiched,</span><br
/> stick the whole tray in the freezer for about half an hour. Next, pour your chocolate wafers into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted (I used about half of the 14 oz. bag and it took around 90 seconds total).  Remove the pretzel sandwiches from the freezer and quickly dip each half-way into the melted chocolate.  Return to the tray and repeat with remaining sandwiches.</p><p><img

class="big-text" style="line-height:120%">Now you&#8217;ve almost got yourself some Chocolate Peanut Butter Pretzel Bites!</span></h2><p>When all are dipped, return the tray to the freezer to set up completely.  Store the sandwiches in the refrigerator until serving time. Finally, you (and if you feel like sharing maybe a friend or two) get to enjoy these delicious peanut butter bites!</p><p>Some other ideas to put a fun twist on your little treats:</p><ul><li>Try using our Milk Chocolate Pretzels or Yogurt Pretzels or Tuxedo Pretzels instead of the Mini Pretzel Twists (skipping the chocolate dipping part of course).</li><li>Buy a second bag of a different type of <a

/> Tons of sugar &#8211; not necessary&#8230; actually i think it ruins it. The if you get good quality almonds then why would you ruin the delicate flavor with the addition of preservatives, loads of sugar and unnatural bs.</p><p>So Yes you can buy it&#8230; but since you&#8217;re here -<br
/> Obviously you&#8217;re one of the smart ones that will take the 10 minutes it takes to make the right way.<br
/> It&#8217;s quick it&#8217;s easy, plus you get the added bonus of the almond flour and&#8230; You&#8217;ll love it when you&#8217;re done</p><p><strong>So grab that measuring cup and get your 1.5 cups of almonds&#8230;</strong><br

/> How to blanch (take the skin off) your almonds.</span><br
/> So ya bought the one&#8217;s with the skin on huh?<br
/> Boil some water.  Add the almonds for 1 min.<br
/> Seriously&#8230; only one minute.  The goal is not to cook em, just to get the skins off.<br
/> Drain, rinse under cold H2O, Drain again.<br
/> Pat Dry and Start a-peelin&#8217;.<br
/> It&#8217;s kinda a pain. So just buy the blanched almonds to begin with&#8230; Capiche?</p><p><b><i>Now on with the almond milk recipe</i></b><br
/> You&#8217;re going to want to soak the almonds for a couple hours&#8230; even better if you can soak them over night.<br
/> Yeah i know it sucks to have to wait&#8230; but it really softens em up and makes them much easier to blend.<br
/> Course you can do it without soaking&#8230; but you need one hulk of a blender!  If you&#8217;ve go a suped-up blender on steroids&#8230; then go for it.<br
/> For the rest of us soaking &#8211; pretty necessary.</p><p><span
class="itemname">Ok you&#8217;ve waited 4 hours &#8211; what now?</span><br
/> Milk em!<br
/> Drain the water, and place the soaked almonds in your blender.<br

/> Add 1.5 cups of water to start.  We&#8217;re going to slowly add more till we get the right consistency.<br
/> Probably going to need to blend for 3-4 mins.<br
/> The milk is still going to start out super chunky and have large pieces of almonds in there.<br
/> It&#8217;s ok.  It&#8217;s not done yet at all.</p><p><span
class="itemname">After a few minutes-</span><br
/> you should have something that looks like and is the consistency of a milk shake&#8230;<br
/> Now there&#8217;s an idea- almond milkshake-  Sounds yummy.  I&#8217;m thinking that&#8217;s my next project.<br
/> Sorry&#8230; bit side tracked. &#8211; back to it-</p><p>If yours doesn&#8217;t look as smooth and delicious as mine, add a bit more water and keep it going, till it looks like this.<br

/> Start by adding a bit less of everything &#8211; you can always add more.<br
/> These ingredients just help enhance the flavor of the almond milk &#8211; it shouldn&#8217;t overwhelm the natural almond flavor.<br

/> Let&#8217;er rip again &#8211;  until all the pieces are gone and you have a true milk consistency.<br
/> Taste the milk, and adjust the vanilla, cinnamon, and sweetener to taste.<br
/> Optional- a pinch of salt.<br
/> Just a touch of salt really makes the flavors pop.</p><p>Tasty Right?<br
/> But we still have the texture issue.  You don&#8217;t want to be sucking down all the almond pieces and meal.<br
/> You want something much closer to the smooth consistency of milk -</p><p><span
class="itemname">So it&#8217;s time to strain</span></p><p>Get Your strainer, layer in cheese cloth &#8211; you need a couple layers so that the smaller almond pieces don&#8217;t seep through.<br
/> Place your strainer over a bowl and pour in the almond milk.<br
/> Use a spoon or spatula to move the solids around so the milk can pass through.<br
/> Once you&#8217;ve gotten all the liquid out, give the cheese cloth a bit of a squeeze to get out the last of it.</p><p><img

/> Set it aside and keep it to make almond flour.</p><h3><span
class="itemname">Ah Refreshing&#8230; You&#8217;ve just completed the Almond Milk Recipe</span></h3><p>Now take a big swig of your almond milk&#8230; Put it in a jar and store it in the refrigerator.  It may separate a bit after having been stored for a while.  Just give it a shake and it&#8217;s good as new.<br
/> Keeps for about a week. &#8211; But really its too tasty to make it a week, usually gone by the first night.</p><p>PS. You can also try this with any other <a
href="http://www.jerrysnuthouse.com/nuts" title="Gourmet Nuts">gourmet nuts</a> &#8211; <a

/> Take the almond meal that you set aside in the cheesecloth.<br
/> Grab you baking sheet and spread the almond meal out evenly.<br

/> The are the <strong>Perfect Party Favor</strong></p><p>We&#8217;re gonna give you the recipe, but first a bit of history to put you at ease.</font></p><h1>The History Of The Chocolate Truffle</h1><p>The First Truffle was a French invention, a simple basic ball of chocolate and cream now know as ganache.</p><p>According to lore, the chocolate truffle was created in the kitchen of famed French culinary artisan Auguste Escoffier during the 1920s.</p><p><img
style="float:left; margin-right:20px;" src="http://jerrysnuthouse.com/blog-images/Auguste-Escoffier.jpg" alt="" />One day, his apprentice attempted to make pastry cream as was the daily routine in the kitchen. As the chocolate and cream mixture hardened, he found he could work the chocolate paste.  Not wanting to waste precious chocolate he began to save it as he could, forming a bumpy, lopsided ball.<br
/> Then to add a bit more interest he rolled his new creation in cocoa powder.</p><p>The apprentice was struck by their resemblance to the luxurious mushroom-like truffles of the French countryside.<br
